Update!

hello world. i have been a bad blogger so here is an update on life since the wedding.. i found a few more cancun pictures on cassidys camera so enjoY :)


We drank about 3 strawberry daquries a day.. since we werent poundin the cervesas we had to take advantage of the open bar right?

Caleb (cassidys brother) who is on his mission in NY got us all these shirts for christmas.. bx means bronx..cute


Cassidy started school a few weeks ago and is such a busy guy working full time and going to college at night. He managed to find a free day to go snowmobiling with his dad! they had a good day and got a great picture of cassidy jumping and pointing at the camera.



Here is our little house. we are finally all settled in and loving it! it is perfect for us :) and the picture above is our lovely across the street neighbors.. we have such a great view..


I also made some of the best cookies in the world last week.. give em a try..
Magic in the middle cookies
these cookies taste just like a reeses cup! they are so rich and delish!
dough:
1 1/2 cups flour
1/2 cup cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
1/2 cup brown sugar
1 stick butter softened
1/4 cup creamy peanut butter
1 large egg
1 large egg yoke
filling:
3/4 cup creamy peanut butter
3/4 cup powdered sugar
Preheat oven to 375. to make the dough: whisk together the flour, cocoa, baking soda, and salt. in another bowl, beat together the sugars, butter, and peanut butter until it is light and fluffy. add the vanilla and the eggs then stir in all the dry ingredients mixing very well
To make the filling: in a small bowl, mix together the peanut butter and powdered sugar until it is smooth. with floured hands make into one inch balls.. about the size of a marble
to shape the cookies: make the dough into balls about the size of walnuts. make a indention in the middle of the cookie with your thumb. put a peanut butter ball in the middle of the dough ball and bring the dough up and over the filling, pressing the edges together over the center. roll the dough in the palm of your hands and smooth it out. then roll that ball in sugar and coat it.. then place the ball on a baking sheet and smash it with the bottom of a cup to make the cookie perfectly round and about 1/2 inch thick.
Bake for 7 to 9 minutes or until you smell chocolate. remove them and let cool.. ( i only had to bake these for 6 minutes but we are at a higher altitude) ENJOY!!! these are amazing
